You may likely find that aged and/or hard cheeses do not affect you, yet soft cheeses will.

Yes, a little bit. It sort of gives it a slightly carmelised taste, but I have very good smell and taste (same thing, really) so you may not notice it. If you take the caplets (take them 30 minutes before consuming lactose) then you can drink regular milk. I do notice 4% milk (which I LOVE) is a bit worse than the 2% I usually drink. But then again, I don't drink milk often. Would that I could because I love it.
Are you sure it is lactose intolerance though? You might have a milk allergy which is different, being allergic to milk proteins. Lactaid won't hurt you either way to try it. If you want to see if you really have LI, drink a quart of Lactaid and see if you have symptoms. If you still do, then it isn't LI or you need more lactase than the Lactaid provides. Ready made is 70% reduced, or was. That is enough for most but not for me because of my heritage.
Yogurt that helps will contain lactobacilli; L acidophilus also helps with IBS and it is possible you have that. Bear in mind that anything containing milk solids, whey, casein, caseinate and other additives contain lactose. It can be added to many prepared foos you may not think of, such as potato chips and processed meats.
