I can toggle it on and off for any player right now.
Obviously it's not as easy as a full creative mode because you would still need to to do
/give [name] [item-id] [amount]
But still possible.
So, does it grant you access to any and every resource without having to mine/craft, with unlimited numbers or does it only give certain resources to build with like the web based game?

No, I missed all that, coming late to the Minecraft party.
I quite like the grafting, as people've said it's a better sense of achievement when you complete something. (I'm only saying that now 'cos I'm not building anything, when I start work on whatever project I know I'm going to want to have everything I need to hand) It'd still be nice to be able to give myself a few diamonds every now and then rather than smelting another set of iron tools. I'm digging out Chris's hole (NJ) at the moment and while that's yielding a nice supply of iron and coal it's not giving me much else which is frustrating. I do like just digging though - it's kinda theraputic late at night.
I've found a few, just not enough. Whenever I make a diamond tool it usually gets used up before I find anymore.
Might hollow out the bottom few layers of the hole later tonight, see what I can find.

TBH gold ore seems to be rarer than diamond at the moment.
Have a look in my mine, the entrance is near the middle of my wall. The pattern I use in that is apparently the most efficient for covering a particular area, i.e. the minimum number of tunnels needed to uncover all potential mineral nodes, with the least amount of travel. I'll try to make a diagram of it, if it isn't clear from walking around inside it.
As for the grafting thing, it definitely affects what you try to build if you know you'd have to collect all the materials first. I wouldn't have been able to build a valley in the sea if I'd had to collect all the wool first.
(wool for putting in place of the water source blocks, of which every block of sea is one. Replace water, burn wool, voila, instant hole-in-the-sea)
